2 slices of artisan bread (sourdough or whole grain)
1/2 cup cottage cheese (full-fat or low-fat)
1 cup shredded cheese (cheddar, mozzarella, or a blend)
2 tablespoons butter (softened)
Salt and pepper to taste
Instructions
In a bowl, combine the cottage cheese with a pinch of salt and pepper. Optionally add herbs like chives or basil.
Lay one slice of artisan bread on a clean surface. Spread half of the cottage cheese mixture evenly over the bread. Sprinkle 1/2 cup of shredded cheese on top.
Place the second slice of artisan bread on top to create the sandwich. Press down gently.
