Instructions

  1. In a medium bowl, whisk together all the marinade ingredients: barbecue sauce, olive oil, apple cider vinegar, honey, minced garlic, smoked paprika, salt, and black pepper.
  2. Place the chicken pieces in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your charcoal grill to medium-high heat (about 400°F or 200°C).
  4. Remove the chicken from the marinade and let the excess drip off. Discard the remaining marinade.
  5. Place the chicken skin-side down on the grill. Grill for 6-8 minutes until the skin is crispy and marked with grill lines.
  6. Flip the chicken and reduce the heat to medium. Grill for an additional 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  7. During the last few minutes of cooking, brush the chicken with additional barbecue sauce.
  8. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
