When it comes to summer grilling or quick weeknight dinners, few recipes hit the mark like Cilantro Lime Marinated Chicken & Shrimp. This dish bursts with bright, zesty flavors, thanks to the combination of fresh cilantro, juicy lime, and a perfect blend of spices. The use of fresh ingredients adds a vibrant touch that not only tantalizes your taste buds but also offers a healthy option loaded with protein.
Ingredients
Scale:
1/4 cup fresh lime juice (about 2-3 limes)
1/4 cup olive oil
1/4 cup fresh cilantro, finely chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1 pound boneless, skinless chicken breasts, cut into strips
In a medium bowl, whisk together the lime juice, olive oil, cilantro, minced garlic, cumin, chili powder, salt, and pepper until well combined.
Place the chicken strips and shrimp in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken and shrimp, ensuring everything is evenly coated. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
For stovetop cooking, heat a large skillet over medium-high heat. Add a little olive oil and cook the marinated chicken for about 6-7 minutes, turning halfway, until it reaches an internal temperature of 165°F (75°C) and is golden brown.
In the same skillet, add the shrimp and cook for 3-4 minutes, or until they turn pink and opaque.
Preheat your grill to medium-high heat. Grill the marinated chicken for 6-7 minutes per side, or until fully cooked. Grill the shrimp for about 2-3 minutes per side, until they are pink and slightly charred.
Once cooked, remove from heat and let rest for a few minutes. Top with fresh cilantro and serve with lime wedges.
