1/4 cup fresh lime juice (about 2 limes)
1/4 cup olive oil
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
4 to 6 bone-in, skin-on chicken thighs
Instructions
In a medium bowl, whisk together the lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper until well combined.
Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2 hours.
Preheat your grill to medium-high heat, about 400°F (200°C).
Remove the chicken thighs from the marinade, allowing excess marinade to drip off. Place them skin-side down on the grill. Grill for about 6-7 minutes until the skin is crispy and golden brown.
Flip the chicken thighs and reduce the heat to medium. Continue grilling for an additional 8-10 minutes until the internal temperature reaches 165°F (75°C).
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
