Watergate Salad, often d믭 as “pistachio salad,” is a nostalgic dish that embodies the essence of retro American cuisine. This creamy dessert salad is a delightful combination of flavors and textures, making it a beloved choice for potlucks, holiday gatherings, and special occasions. Originating in the 1970s, this dish gained its name from the infamous Watergate scandal, and it has since become a staple in many households, known for its light, refreshing taste and easy preparation. Its sweet and nutty flavor profiles, thanks to the pistachio pudding, marshmallows, and fruit, create a unique dessert experience that is not only delicious but also visually appealing with its vibrant green hue.
Ingredients
Scale:
1 package (3.4 oz) instant pistachio pudding mix
1 cup milk
1 cup Cool Whip, thawed

Drain the crushed pineapple well and add it to the pudding mixture, stirring until evenly incorporated.
Add the mini marshmallows, chopped nuts, and shredded coconut (if using) to the mixture. Gently fold all ingredients together until well combined.
