2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup cream cheese, softened
1 small onion, finely chopped
1 jalapeño pepper, finely chopped (remove seeds for less heat)
1 cup diced tomatoes with green chilies (canned)
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
¼ cup fresh cilantro, chopped (for garnish)
1 avocado, diced (optional topping)
Sliced jalapeños (optional for garnish)
Instructions
Preheat your smoker or grill to 225°F (107°C). If you’re using a charcoal grill, add a generous amount of wood chips to create a smoky flavor.
In a large mixing bowl, combine the shredded cheddar cheese, Monterey Jack cheese, and softened cream cheese. Stir until well blended.
Add the chopped onion, jalapeño pepper, diced tomatoes with green chilies, garlic powder, smoked paprika, salt, and pepper to the cheese mixture. Mix thoroughly.
Transfer the mixture into a cast-iron skillet or an aluminum foil pan, spreading it out evenly.
Place the skillet or pan on the grill grates and close the lid. Smoke the queso dip for about 30-40 minutes, stirring halfway through.
Once done, carefully remove the dip from the smoker. Garnish with fresh cilantro and diced avocado, if desired.
Serve warm with tortilla chips, sliced vegetables, or drizzled over nachos.
