1 lb ground turkey, preferably lean
2 medium sweet potatoes, peeled and diced (about 3 cups)
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon cumin
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnishing)
Avocado slices (optional)
Hot sauce (optional)
Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they begin to soften and turn golden brown.
Add the diced onion and red bell pepper to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender and the onion becomes translucent.
Push the sweet potato mixture to one side of the skillet, then add the ground turkey to the other side. Break it apart with a spatula as it cooks, about 6-8 minutes until no longer pink and beginning to brown.
Stir in the minced garlic, smoked paprika, cumin, salt, and pepper. Mix everything together until well combined.
Continue cooking for another 2-3 minutes, allowing the flavors to meld and the turkey to brown slightly.
Remove from heat and garnish with fresh parsley. Add avocado slices and hot sauce if desired.
