Ingredients
Scale:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons granulated sugar
1/2 cup warm water
1/4 cup vegetable oil
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon (for coating)
Honey or chocolate sauce (for serving)
Instructions
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined and free of lumps.
Make a well in the center of the dry mixture and add the warm water and vegetable oil gradually, incorporating them slowly to ensure a smooth dough.
Stir the mixture with a wooden spoon or your hands until a dough forms.
Knead the dough on a lightly floured surface for about 2-3 minutes until smooth and elastic.
Cover the dough with a clean kitchen towel and let it rest for at least 30 minutes.
After resting, roll out the dough on a floured surface to about 1/4 inch thickness.
Cut the dough into squares or triangles, approximately 2-3 inches on each side.
In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).
Carefully place the cut sopapilla dough into the hot oil in batches and fry for about 1-2 minutes or until they puff up and turn golden brown.
Use a slotted spoon to remove the sopapillas and place them on a paper towel-lined plate to drain excess oil.
Mix the granulated sugar with ground cinnamon in a shallow dish. While the sopapillas are still warm, toss them in the cinnamon sugar mixture until fully coated.
Serve warm, with honey drizzled over the top or on the side for dipping.
