1 cup ground beef or turkey
1 tablespoon taco seasoning
1/4 cup diced onions
1/4 cup diced tomatoes
1/4 cup black beans, rinsed and drained (optional)
4 slices of bread (your choice: sourdough, whole grain, or white)
In a skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Be sure to stir occasionally to ensure even cooking. Drain excess fat if necessary.
Add the diced onions, tomatoes, and taco seasoning to the meat. Stir to combine thoroughly and cook for an additional 3-4 minutes until the onions are softened and fragrant.
While the taco filling is cooking, preheat another skillet over medium heat. Spread a thin layer of butter on one side of each slice of bread.
Place two slices of bread butter-side down on the skillet. Layer half of the shredded cheddar and Monterey Jack cheese on top.
Add a generous scoop of the taco filling over the cheese, followed by the remaining cheese and the other slices of bread, butter-side up.
