Sweet Pepper Relish is a vibrant and flavorful addition to any meal, transforming ordinary dishes into extraordinary ones. This relish is beloved for its balance of sweetness and tang, making it perfect for sandwiches, burgers, and even grilled meats.
Ingredients

4 cups of finely chopped sweet bell peppers (mix of red, yellow, and green)
1 cup of finely chopped onion (preferably yellow or white)
2 cups of white vinegar
1 cup of granulated sugar
1 tablespoon of kosher salt
1 tablespoon of mustard seeds (optional)
1 teaspoon of red pepper flakes or to taste
2 cloves of minced garlic
Instructions
Wash and chop the sweet peppers and onion into fine pieces.
In a large pot, combine the chopped peppers, onion, vinegar, sugar, salt, mustard seeds, red pepper flakes, and minced garlic. Stir well to ensure the sugar and salt are evenly distributed among the vegetables.
Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and salt. Once boiling, reduce the heat and simmer for 10-15 minutes until the vegetables are tender.
After simmering, the relish should have thickened slightly. If you prefer a thicker consistency, continue cooking for a few more minutes.
Sterilize canning jars by boiling them in water for 10 minutes. Carefully ladle the hot relish into the jars, leaving about 1/4 inch of headspace at the top.
Wipe the rims of the jars with a clean cloth to ensure a proper seal. Place the lids on and screw the bands on until they are fingertip-tight.
Process the jars in a boiling water bath for 10 minutes to preserve the relish.
Remove the jars from the water bath and let them cool completely. Check the seals before storing.
