- 2 tablespoons ranch seasoning mix
- 2 tablespoons olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup milk
- 1/4 cup honey
- 1/2 cup shredded cheddar cheese
- Chopped green onions or parsley (optional)
Instructions
- Season the chicken breasts with ranch seasoning, ensuring they are evenly coated on all sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts carefully to avoid splatters.
- Sear the chicken for about 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the rice and toast for about 2 minutes, stirring frequently.
- Pour in the chicken broth and milk, stirring to combine. Bring to a gentle simmer.
- Return the chicken to the skillet. Drizzle the honey over the chicken and rice mixture, then cover the skillet and let it simmer for about 15 minutes.
- After 15 minutes, sprinkle the shredded cheddar cheese on top. Cover again and let it melt for an additional 5 minutes.
- Once the cheese is melted and bubbly, garnish with chopped green onions or parsley, if desired. Serve immediately.
