1 pound (450g) boneless, skinless chicken thighs
2 tablespoons soy sauce
1 tablespoon cornstarch
8 ounces (225g) penne pasta
4 tablespoons unsalted butter
5 cloves garlic, minced
1/4 cup honey
1 tablespoon chili garlic sauce
1 tablespoon rice vinegar
Salt and pepper to taste

Instructions
Start by marinating the chicken. In a bowl, combine the chicken thighs with soy sauce and cornstarch. Mix well until the chicken is coated thoroughly. Let it marinate for at least 15 minutes.
While the chicken marinates, cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and golden brown.
Add the marinated chicken to the skillet. Cook for 7-10 minutes, stirring occasionally, until the chicken is cooked through and browned.
Once the chicken is cooked, reduce the heat to low and pour in the honey, chili garlic sauce, and rice vinegar. Stir to combine and allow to simmer for an additional 2-3 minutes.
Add the cooked penne pasta to the skillet and toss everything together to ensure the pasta is evenly coated with the sauce. Season with salt and pepper to taste.
