  2. In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined. The flour mixture should be light and airy. In another bowl, beat the egg, then add milk and vanilla extract, mixing well to incorporate air into the mixture for a fluffier texture.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined, ensuring that no dry flour remains. Be careful not to overmix; a few lumps are okay, as this will help maintain the fritters' light texture.
  4. Gently fold the peach mixture into the batter, ensuring that the peaches are evenly distributed throughout. Each spoonful of batter should capture some of the sweet peaches to enhance flavor.
