4 boneless, skinless chicken breasts (about 1.5 to 2 pounds), preferably organic
1 cup of your favorite salsa (mild, medium, or hot based on preference)
8 ounces cream cheese (softened at room temperature)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
Salt and pepper to taste
Chopped fresh cilantro (optional)
Sliced avocado (optional)
Shredded cheese, such as cheddar or Monterey Jack (optional)
Instructions
Begin by placing the chicken breasts in the bottom of your slow cooker.
In a mixing bowl, combine the salsa, garlic powder, onion powder, cumin, salt, and pepper. Stir well to integrate all the seasonings.
Pour the salsa mixture evenly over the chicken breasts.
Place the lid on the slow cooker and cook on low for 6-7 hours or high for 3-4 hours.
About 30 minutes before serving, add the softened cream cheese to the slow cooker and stir until fully melted.
