Ingredients
Scale:
- 1 can (around 4-5 ounces) sardines in olive oil or water, drained
- 2 cups mixed greens (such as arugula, spinach, or romaine)
- 1 small cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, finely sliced
- 1/4 cup black olives, pitted and sliced (optional)
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice (freshly squeezed for best flavor)
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
- In a large mixing bowl, combine the mixed greens, diced cucumber, cherry tomatoes, red onion, and black olives.
- Carefully add the drained sardines to the salad mixture and break them into bite-sized pieces.
- Drizzle the lemon vinaigrette over the salad and toss everything together gently.
- Serve immediately, or refrigerate for 15-20 minutes to allow the flavors to meld together.
