1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons red wine vinegar
3 cloves garlic, minced
1 tablespoon smoked paprika
1 teaspoon cumin
1 teaspoon dried oregano
Salt and pepper to taste
1 1/2 pounds beef sirloin or flank steak, cut into 1-inch cubes
1 bell pepper, cut into 1-inch pieces (any color)
1 red onion, cut into wedges

Instructions
In a medium bowl, whisk together the olive oil, soy sauce, red wine vinegar, minced garlic, smoked paprika, cumin, oregano, salt, and pepper.
Add the beef cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Preheat your oven to 400°F (200°C).
Prepare the vegetables by cutting the bell pepper and onion into 1-inch pieces.
Remove the beef from the marinade and thread the cubes onto skewers, alternating with pieces of bell pepper and onion.
Arrange the skewers on a baking sheet lined with parchment paper.
Bake the kebabs in the preheated oven for 15-20 minutes, turning halfway through.
Once cooked, remove the kebabs from the oven and let them rest for a few minutes before serving.
