6 cups crispy rice cereal
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
Instructions
Prepare a 9x13-inch baking pan by lining it with parchment paper or greasing it lightly with cooking spray.
In a large saucepan over medium heat, combine the granulated sugar and light corn syrup. Stir continuously until the mixture comes to a boil, which should take approximately 3-5 minutes.
Once boiling, remove the saucepan from heat and quickly stir in the creamy peanut butter until fully melted and combined.
Immediately pour the peanut butter mixture over the crispy rice cereal in a large mixing bowl. Using a spatula, gently fold the cereal until it is evenly coated.
Transfer the mixture to the prepared baking pan and press it down evenly with the spatula or your hands.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring after each, until melted and smooth.
Pour the melted chocolate and butterscotch over the pressed cereal mixture in the baking pan, using a spatula to spread it evenly.
Let the Scotcheroos cool at room temperature for at least 1 hour, or until the chocolate topping is set.
Once set, lift the bars out of the pan using the parchment paper. Cut them into squares or rectangles and serve.
