A quick weeknight dinner that combines the robust, spicy flavors of traditional Kung Pao chicken with the ease of using ground chicken.
Ingredients

- 1 pound ground chicken
- 2 tablespoons vegetable oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili garlic sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup unsalted dry roasted peanuts
- 3 green onions, sliced
- Sesame seeds (optional)
- Additional sliced green onions (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Add the ground chicken to the skillet and cook, stirring frequently, until browned and cooked through, about 5-7 minutes.
- Once the chicken is cooked, add minced garlic and ginger to the skillet. Sauté for about 1-2 minutes until fragrant.
- In a separate bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, hoisin sauce, and sesame oil to create the sauce.
- Pour the sauce over the cooked chicken in the skillet and stir well to combine, allowing the flavors to meld for about 2-3 minutes.
- Add the diced red and green bell peppers to the skillet, and stir-fry for an additional 3-4 minutes.
- Mix in the roasted peanuts and half of the sliced green onions, stirring until everything is heated through.
- Serve immediately, garnished with the remaining green onions and sesame seeds, if desired.
