Ingredients
Scale:
8 lamb chops, about 1 inch thick
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper, to taste
2 ripe peaches, pitted and diced
1/4 cup honey
1 tablespoon balsamic vinegar
1 tablespoon fresh lemon juice
Instructions
In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Rub this mixture all over the lamb chops. Let them marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
In a saucepan over medium heat, combine diced peaches, honey, balsamic vinegar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the peaches soften and the mixture thickens slightly. Season with salt and pepper to taste.
Preheat your oven to 400°F (200°C).
Heat a large oven-safe skillet over medium-high heat. Place the marinated lamb chops in the skillet, searing for about 2-3 minutes on each side. Transfer the skillet to the oven and roast for an additional 8-10 minutes, or until the internal temperature reaches 145°F (63°C).
Remove the skillet from the oven and let the lamb chops rest for about 5 minutes.
Drizzle the peach sauce over the roasted lamb chops before serving.
