Ingredients
Scale:
1/4 cup soy sauce
1/4 cup pineapple juice
2 tablespoons honey or brown sugar
2 cloves garlic, minced
1 teaspoon ginger, minced
1.5 pounds boneless, skinless chicken thighs or breasts
1 medium pineapple, cut into rings or chunks, preferably fresh for optimal flavor
2 tablespoons olive oil (for grilling or baking)
Salt and pepper to taste
Cooked rice or quinoa
Fresh cilantro or parsley for garnish
Lime wedges (optional)
Instructions
In a bowl, whisk together soy sauce, pineapple juice, honey, garlic, and ginger until combined.
Place the chicken in a resealable plastic bag or a shallow dish and pour the marinade over it, ensuring all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor absorption.
If grilling, preheat your grill to medium-high heat, about 375°F to 450°F (190°C to 232°C). Alternatively, preheat your oven to 400°F (200°C) if you'll be baking the chicken.
Remove the chicken from the marinade, discarding any excess marinade. Season the chicken with salt and pepper to taste. Grill the chicken for about 6-7 minutes on each side, until cooked through and juices run clear. If baking, place the chicken on a baking sheet and bake for 25-30 minutes.
In the last few minutes of cooking, add pineapple slices to the grill or baking sheet to caramelize slightly.
Let the chicken rest for 5 minutes before slicing. Serve over rice or quinoa, topped with grilled pineapple and garnished with fresh herbs.
