Instructions
Start by washing the cherry tomatoes thoroughly under cold running water. Remove any stems or blemishes you may find, as these can affect the flavor and preservation. Pat them dry with a clean towel to ensure they are not too watery when pickling.
In a medium saucepan, combine the vinegar, water, salt, sugar, peppercorns, mustard seeds, and red pepper flakes. Bring the mixture to a boil over medium heat, stirring continuously until the salt and sugar have completely dissolved, creating a well-balanced brine.
Once the brine is boiling, reduce the heat slightly and let it simmer for about 5 minutes.
While the brine simmers, prepare a clean, sterilized jar (or jars) for canning. Place the halved garlic cloves and fresh basil leaves at the bottom of the jar.
Pack the cherry tomatoes into the jar tightly but gently, ensuring they are snug without crushing them.
Carefully pour the hot brine over the tomatoes, making sure they are completely submerged. Leave about 1/2 inch of headspace at the top of the jar.
