Ingredients
Scale:
1/2 cup fresh orange juice, preferably from freshly squeezed oranges
2 tablespoons olive oil, high-quality extra virgin olive oil recommended
2 tablespoons honey, adjusted based on sweetness preference
2 tablespoons chipotle in adobo, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
Salt, to taste
Black pepper, to taste
4 bone-in, skin-on chicken thighs (or your choice of chicken pieces)
Fresh cilantro, chopped (optional)
Orange slices, for garnish
Instructions
In a medium bowl, whisk together the fresh orange juice, olive oil, honey, chipotle peppers, minced garlic, ground cumin, salt, and black pepper until well combined.
Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.
Preheat your grill to medium-high heat (about 375°F to 400°F) or preheat your oven to 425°F.
Remove the chicken from the marinade, allowing any excess to drip off. Discard the marinade.
If grilling, place the chicken thighs skin-side down on the grill. Cook for about 6-8 minutes, then flip and cook for an additional 6-8 minutes, or until the internal temperature reaches 165°F.
If baking, place the chicken thighs skin-side up on a baking sheet lined with parchment paper. Bake for 30-35 minutes, or until the skin is crispy and the chicken is cooked through.
Once cooked, remove the chicken from the grill or oven, and let it rest for 5 minutes before serving.
Serve the Orange Chipotle Chicken garnished with fresh cilantro and orange slices.
