2 tablespoons Cajun spice mix
8 ounces fettuccine or penne pasta
4 cups chicken broth, preferably low-sodium
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil, extra virgin
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Instructions
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Season the chicken pieces with Cajun spice mix, salt, and pepper, ensuring they are evenly coated.
