Ingredients
Scale:
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 cup mixed berries (blueberries, raspberries, or strawberries)
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy, ensuring there are no lumps.
Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
Combine Wet Ingredients: In another bowl, mix the melted butter, eggs, buttermilk, and vanilla extract. Whisk until smooth and well integrated.
Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
Add Berries: Gently fold in the mixed berries, being careful not to break them up too much.
Fill Muffin Tin: Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full. Spoon a dollop of the cream cheese filling into the center of each muffin.
Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the muffin comes out clean.
Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
