- 2 ¼ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tsp peppermint extract
- 1 cup semi-sweet chocolate chips
- ½ cup mint chocolate chips (optional)
- ¼ cup crushed mint candies (for garnishing)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, mixing well after each addition. Then, mix in the vanilla and peppermint extracts.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Gently fold in the semi-sweet chocolate chips and mint chocolate chips.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
- Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
