  1. Soak the dried cannellini beans overnight in a large bowl of water. Drain and rinse before cooking.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, cooking until the vegetables are softened, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced tomatoes, vegetable broth, oregano, basil, and soaked cannellini beans. Bring to a boil.
  5. Once boiling, reduce the heat to a simmer. Cover and cook for about 30 minutes, until the beans are just tender.
