4 boneless, skinless chicken breasts (about 1.5 pounds)
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, freshly ground
1 teaspoon Italian seasoning
2 tablespoons olive oil, preferably extra virgin
1 cup heavy cream
1/2 cup chicken broth
1/2 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1/4 cup fresh basil, chopped
1/2 cup grated Parmesan cheese
Instructions
Season the chicken breasts generously with salt, pepper, and Italian seasoning.
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
Remove the chicken from the skillet and set aside, covering loosely with foil.
In the same skillet, reduce heat to medium and add minced garlic, sauté for 30 seconds.
Stir in chopped sun-dried tomatoes and cook for another minute.
Pour in the heavy cream and chicken broth, stirring to combine and let it simmer for 2-3 minutes.
Add the grated Parmesan cheese and stir until melted and creamy. Return the chicken to the skillet, spooning sauce over them.
Sprinkle the chopped basil on top and let it simmer for an additional 2 minutes before serving.
