A refreshing twist on a classic dessert that perfectly embodies the essence of summer, combining the sweetness of ripe strawberries with the zesty brightness of lemon and the aromatic touch of fresh basil.
Ingredients
Scale:
4 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
2 tablespoons lemon juice (freshly squeezed for best flavor)
1 tablespoon fresh basil, finely chopped
1 tablespoon cornstarch (to help thicken the juices)
1 cup all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted and slightly cooled
1/2 cup milk (preferably whole milk for richness)
1 teaspoon vanilla extract (pure extract enhances the flavor)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced strawberries, sugar, lemon juice, chopped basil, and cornstarch. Stir gently and let it sit for about 10 minutes.
In another bowl, whisk together the flour, sugar, baking powder, and salt. Pour in the melted butter, milk, and vanilla extract. Stir until just combined.
Grease a baking dish (approximately 9x9 inches) and pour the strawberry mixture into the bottom, then spoon the cobbler batter over the strawberries.
Place the cobbler in the preheated oven and bake for 30-35 minutes, until the topping is golden brown.
Remove from the oven and let it cool for about 10 minutes before serving.
