8 oz imitation crab meat, shredded
1 cup cucumber, julienned
1 cup carrots, shredded
1 cup red cabbage, finely sliced
1 avocado, diced
1/4 cup green onions, chopped
1/4 cup cilantro, chopped
1/2 cup mayonnaise
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon sugar
1 tablespoon Sriracha (optional, for spice)
Salt and pepper to taste
Instructions
In a large bowl, combine the shredded imitation crab meat, cucumber, carrots, red cabbage, avocado, green onions, and cilantro. Toss gently to mix.
In a separate bowl, whisk together the mayonnaise, rice vinegar, soy sauce, sesame oil, sugar, and Sriracha (if using). Adjust seasoning with salt and pepper.
