2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
1/4 cup honey
1/4 cup soy sauce
2 tablespoons minced garlic
1 tablespoon minced ginger (optional)
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
Chopped green onions for garnish
Toasted sesame seeds for garnish
Instructions
In a large pot, bring salted water to a boil. Cook the noodles according to package instructions until al dente, about 7 to 10 minutes. Drain and set aside.
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken breasts and cook for about 5-7 minutes, until browned and cooked through.
Add the mixed vegetables and cook for another 3-4 minutes until tender-crisp.
In a small bowl, whisk together honey, soy sauce, minced garlic, ginger, and sesame oil. In another bowl, mix cornstarch with water to create a slurry. Combine both mixtures in the skillet.
