Instructions
In a medium bowl, dissolve the fruit-flavored gelatin in 1 cup of boiling water. Stir until completely dissolved.
Pour in 1 cup of cold water and mix thoroughly. Let the mixture cool to room temperature for about 10-15 minutes.
Once cooled, pour a small amount of the gelatin mixture into the bottom of serving cups, filling them about 1/3 of the way. Refrigerate for about 30 minutes until set.
While the gelatin is setting, mix the Greek yogurt, honey (or maple syrup), and vanilla extract in a bowl until smooth and creamy.
After the Jello layer has set, gently spoon the yogurt mixture on top of the set gelatin, filling the cups about 2/3 full.
Pour the remaining gelatin mixture over the yogurt layer until the cups are full. Return them to the refrigerator for another 2 hours or until fully set.
Once set, top with fresh fruit and mint leaves for garnish. Serve chilled.
