Ingredients
Scale:
2 medium zucchinis, sliced into 1/4-inch thick rounds
2 medium yellow squashes, sliced into 1/4-inch thick rounds
3 tablespoons olive oil, preferably extra virgin
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon balsamic vinegar (optional)
Fresh basil leaves, chopped (for garnish)
Grated Parmesan cheese (optional, for garnish)
Instructions
Start by preparing your marinade. In a small bowl, whisk together the olive oil, minced garlic, dried oregano, salt, black pepper, and balsamic vinegar until well combined.
Slice the zucchinis and yellow squashes into 1/4-inch thick rounds.
In a large bowl, toss the sliced vegetables with the marinade, ensuring each piece is well coated. Let them marinate for at least 15 minutes.
Preheat your grill to medium-high heat (about 400°F or 200°C).
Once the grill is hot, place the marinated squash and zucchini directly onto the grill grates. Cook for 4-5 minutes on one side.
Flip the vegetables carefully using tongs and grill for an additional 3-4 minutes.
Remove the grilled squash and zucchini from the grill and let them rest for a minute.
Before serving, garnish with freshly chopped basil and a sprinkle of grated Parmesan cheese if desired.
