Instructions

  1. In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta and set it aside.
  2. In a large skillet over medium-high heat, add 1 tablespoon of butter. Season the chicken strips with Italian seasoning, salt, and black pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the remaining butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Let it reduce slightly for about 3-4 minutes. Then, stir in the heavy cream and bring to a gentle simmer.
  5. Gradually whisk in the grated Parmesan cheese until melted and the sauce becomes creamy. If the sauce is too thick, add reserved pasta water until you reach your desired consistency.
  6. Add the cooked pasta and chicken back into the skillet. Toss everything together until the pasta is well coated in the garlic butter sauce. If using vegetables, add them now and cook for an additional 2-3 minutes.
  7. Remove from heat, and adjust seasoning with salt and black pepper as needed. Garnish with freshly chopped parsley before serving.
