French Onion Meatloaf

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook, stirring frequently, until the onions are golden brown and soft, about 15-20 minutes.
  3. In a large mixing bowl, combine the ground beef, cooled caramelized onions, minced garlic, breadcrumbs, eggs, Worcestershire sauce, thyme, salt, pepper, Parmesan cheese, and onion soup mix. Mix until just combined.
  4. Transfer the meat mixture to a greased loaf pan and shape it into a loaf.
  5. In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Spread half of the glaze mixture over the top of the meatloaf.
  6. Place the meatloaf in the preheated oven and bake for 45 minutes. After 45 minutes, add the remaining glaze on top and sprinkle shredded Swiss cheese over the meatloaf. Continue baking for an additional 15 minutes.
  7. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Garnish with fresh parsley before serving.
