4 cups fresh blueberries (washed and drained)
1 cup granulated sugar (adjust based on sweetness of blueberries)
2 tablespoons cornstarch
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter (melted)
1 cup milk
1 teaspoon vanilla extract (for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the fresh blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Gently toss and let sit for about 10 minutes.
In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract. Mix until just combined.
Pour the blueberry filling into a greased 9x13-inch baking dish. Dollop the cobbler topping over the blueberries, leaving gaps for the blueberries to peek through.
Bake for 35-40 minutes or until the topping is golden brown.
Allow to cool for at least 15 minutes before serving, ideally with a scoop of vanilla ice cream.
