1 small carrot, julienned
1 small daikon radish, julienned (optional)
2 green onions, chopped
3 tablespoons of Korean red pepper flakes (gochugaru)
3 tablespoons of rice vinegar
1 tablespoon of soy sauce
1 tablespoon of sugar (or honey for a healthier option)
1 teaspoon of grated ginger
1-2 cloves of garlic, minced
1 teaspoon of sesame oil

Instructions
In a large mixing bowl, combine the sliced apples, carrot, daikon radish (if using), and green onions. Toss them gently to mix.
In a separate small bowl, prepare the marinade by combining gochugaru, rice vinegar, soy sauce, sugar, grated ginger, minced garlic, and sesame oil. Stir until the sugar is dissolved.
