1 tablespoon of cooking oil (for frying)
1 cup of finely chopped vegetables (such as bell peppers, carrots, and spinach)
1/2 cup of cooked protein (like shredded chicken, tofu, or shrimp)
1/4 cup of chopped fresh herbs (like cilantro or basil)
Your choice of flavorful dipping sauces (such as soy sauce, hoisin, or peanut sauce)
Chili sauce or sweet and sour sauce
Instructions
Prepare the filling by mixing the chopped vegetables, protein, and herbs in a bowl. Ensure that the mixture is well-combined for even flavor distribution. Set aside.
In a shallow dish, pour the warm water. Soak one rice paper sheet in the water for about 10-15 seconds or until it becomes pliable.
Lay the soaked rice paper flat on a clean surface. Place about 2 tablespoons of the filling mixture in the center of the sheet.
Fold the sides of the rice paper over the filling, then roll it up from the bottom to the top, sealing in the filling.
Repeat the process with the remaining rice paper sheets and filling until everything is used up.
Heat a non-stick skillet over medium-high heat and add 1 tablespoon of cooking oil.
Once the oil is hot, place 2-3 pancakes in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
Remove the pancakes from the skillet and place them on a paper towel to absorb excess oil. Continue cooking the remaining pancakes.
