Ingredients

1 pound fresh asparagus, trimmed and cut into 2-inch pieces
2 medium red potatoes, diced (about 2 cups)
1 ripe avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons lemon juice, freshly squeezed
1 teaspoon Dijon mustard
Salt and pepper to taste
Optional: 1 clove garlic, minced
Instructions
Start by boiling a pot of salted water. Add the diced potatoes and cook for about 10-12 minutes or until tender but not mushy. Drain and set aside to cool.
In the same pot of boiling water, blanch the asparagus for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.
In a large mixing bowl, combine the cooled potatoes, blanched asparagus, diced avocado, cherry tomatoes, red onion, and parsley. Gently fold the ingredients together.
To prepare the dressing, whisk together olive oil, lemon juice, Dijon mustard, minced garlic (if using), salt, and pepper in a small bowl until emulsified.
Drizzle the dressing over the salad and toss gently to combine.
Chill the salad in the refrigerator for at least 30 minutes before serving.
