Ingredients
Scale:
- 4 fillets of white fish (such as cod, halibut, or tilapia)
- 2 tablespoons olive oil (extra virgin recommended)
- Salt and pepper (to taste)
- 2 tablespoons olive oil (for sauce)
- 3 cloves garlic (minced)
- 1 can (14 oz) crushed tomatoes
- 1/4 cup pitted olives (sliced)
- 2 tablespoons capers (rinsed)
- 1 teaspoon red pepper flakes (adjust for spice preference)
- 1 teaspoon dried oregano
- Fresh basil leaves (for garnish)
Instructions
- Pat the fish fillets dry with paper towels and season both sides with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Carefully place the fish fillets in the skillet.
- Cook for 3-4 minutes on each side until golden brown and opaque in the center. Remove and keep warm.
- In the same skillet, add 2 tablespoons of olive oil and reduce the heat to medium. Add minced garlic and sauté for 30 seconds.
- Pour in crushed tomatoes, then add olives, capers, red pepper flakes, and oregano. Simmer for 5-7 minutes until thickened.
- Return fish to the skillet and spoon the sauce over top. Cover and cook for an additional 2-3 minutes.
- Remove from heat and garnish with fresh basil leaves before serving.
