2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
2 medium apples, peeled, cored, and chopped
1 tablespoon lemon juice
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 cup chopped pecans or walnuts (optional)
1 tablespoon sugar (optional)
Instructions
Preheat your oven to 350°F (175°C).
Grease a 9x5 inch loaf pan with butter or non-stick spray.
In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until well combined.
In a large mixing bowl, beat the softened butter and granulated sugar together until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and buttermilk.
Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
In a separate bowl, toss the chopped apples with lemon juice, brown sugar, and cinnamon. Fold the apple mixture into the batter.
