4 large potatoes, peeled and diced (Yukon Gold or Russet)
1 medium onion, chopped finely
3 cloves garlic, minced
4 cups chicken broth (or vegetable broth for a vegan option)
1 cup heavy cream (or coconut milk for a vegan option)
6 slices bacon, cooked and crumbled (optional)
1 cup cheddar cheese, shredded (optional)
Salt and pepper to taste
Fresh chives or green onions for garnish

Instructions
Start by peeling and dicing the potatoes into small chunks.
Add the diced potatoes, chopped onion, and minced garlic to your crock pot.
Add salt and pepper to taste.
Cover the crock pot and cook on low for 6-8 hours or on high for 4 hours.
Once cooked, use an immersion blender to puree the soup to your desired consistency.
Stir in the heavy cream and mix well.
