Ingredients
Scale:
2 medium zucchinis, grated (about 2 cups)
1 cup fresh corn kernels (or frozen, thawed)
1/2 cup all-purpose flour (or gluten-free flour)
1/4 cup grated Parmesan cheese (optional)
1 large egg
2 green onions, finely chopped
1 clove garlic, minced
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh herbs (like parsley or basil), finely chopped
Vegetable oil for frying
Instructions
Start by preparing the zucchini. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
In a large mixing bowl, combine the grated zucchini, corn kernels, flour, Parmesan cheese (if using), egg, green onions, garlic, baking powder, salt, pepper, and fresh herbs. Mix until all ingredients are well combined.
Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
Using a tablespoon, scoop the batter and gently drop it into the hot oil, flattening each fritter slightly with the back of the spoon.
Cook for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to carefully flip them.
Serve the fritters warm, garnished with additional fresh herbs if desired.
