A delightful combination of texture and taste, these crispy grated potato fritters are perfect for serving as a savory snack, side dish, or quick lunch.
Ingredients
Scale:
4 medium-sized potatoes (about 2 pounds), peeled and grated
1 small onion, finely chopped
2 large eggs
1/4 cup all-purpose flour (or gluten-free flour for a gluten-free option)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon fresh herbs (like parsley or chives), chopped (optional)
Vegetable oil (or any high-heat oil) for frying
Instructions
Prepare the Potatoes: Begin by peeling and grating the potatoes using a box grater or food processor. After grating, place the potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
Mix Ingredients: In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, black pepper, garlic powder, and herbs (if using). Mix until all ingredients are well incorporated.
Heat the Oil: In a large skillet, pour in enough vegetable oil to cover the bottom of the pan (about 1/4 inch). Heat the oil over medium-high heat until shimmering.
Form the Fritters: Using a tablespoon or your hands, scoop out portions of the potato mixture and form them into patties, roughly 1/2 inch thick.
Fry the Fritters: Carefully place the fritters in the hot oil, frying each side for about 3-4 minutes or until golden brown and crispy.
Drain and Serve: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve them warm with your favorite dipping sauce.
