Ingredients

- 1 cup rolled oats
- 1 tablespoon chia seeds
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon brown sugar (or maple syrup)
- 1 cup almond milk (or any milk of your choice)
- 1/2 teaspoon vanilla extract
- 1 ripe peach, diced
- A sprinkle of granola (optional)
- Extra cinnamon and nutmeg, to taste
Instructions
- In a medium bowl, combine the rolled oats, chia seeds, cinnamon, nutmeg, and brown sugar. Stir until well mixed.
- In a separate bowl or measuring cup, whisk together the almond milk and vanilla extract until fully combined.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly combined.
- Add the diced peaches into the mixture, gently folding them in.
- Cover the bowl with plastic wrap or transfer the mixture into individual jars or containers.
- Refrigerate overnight, or for at least 4 hours.
- When ready to serve, give your oats a good stir and top with extra diced peaches, a sprinkle of granola, and additional cinnamon or nutmeg.
