  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of butter and the sliced mushrooms. Sauté for about 5-6 minutes until golden brown.
  5. Add the minced garlic and sauté for an additional minute until fragrant.
  6. Pour in the chicken broth and scrape the bottom of the skillet. Allow to simmer for about 3-4 minutes.
  7. Stir in the heavy cream, dried thyme, and Italian seasoning. Cook for another 2-3 minutes until the sauce thickens.
  8. Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 2 minutes.
  9. Garnish with fresh parsley before serving.
