Ingredients

4 ripe peaches, halved and pitted
8 oz burrata cheese, at room temperature
5 cups arugula or mixed greens, washed and dried
1/4 cup toasted pecans or walnuts, roughly chopped
1/4 cup crumbled goat cheese (optional)
1/4 cup balsamic vinegar
2 tablespoons honey
1/4 cup extra virgin olive oil
Salt and freshly ground black pepper to taste
Instructions
Preheat the Grill: Heat your grill or grill pan to medium-high heat (about 400°F).
Prep the Peaches: Brush the cut sides of the peach halves lightly with olive oil.
Grill the Peaches: Place the peaches cut-side down on the grill. Grill for 3-4 minutes until grill marks form.
Make the Dressing: In a small bowl, whisk together balsamic vinegar and honey. Gradually drizzle in the olive oil while whisking constantly.
