1 tablespoon olive oil
1/4 cup Dijon mustard
1 cup heavy cream
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme, chopped
2 cloves garlic, minced
1 tablespoon lemon juice
Instructions
Season the chicken thighs generously with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Add the chicken thighs to the skillet and sear for about 5-7 minutes on each side until golden brown and cooked through.
Remove the chicken from the skillet and set aside.
Lower the heat to medium and add minced garlic to the skillet, sauté for about 30 seconds until fragrant.
Stir in the Dijon mustard, heavy cream, lemon juice, and chopped herbs. Mix well and deglaze the skillet.
Allow the sauce to simmer for about 2-3 minutes until it thickens slightly.
Return the chicken thighs to the skillet, coating them with the creamy sauce. Cook for an additional 1-2 minutes.
Plate the chicken thighs drizzled with the Dijon herb sauce and garnish with additional herbs if desired.
