12 ounces penne pasta
1 pound sirloin steak, cut into bite-sized pieces
1 medium bell pepper, diced
1 small onion, finely chopped
2 cloves garlic, minced
4 tablespoons unsalted butter
1 tablespoon olive oil
1 cup heavy cream
1 cup pepper jack cheese, grated
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for serving)
Additional pepper jack cheese, for topping
Instructions
Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente, about 10-12 minutes. Drain and set aside, reserving ½ cup of pasta water.
Prepare the Steak: Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil. Season the steak pieces with salt and pepper, then cook for 3-4 minutes until browned. Remove from skillet and let rest.
Sauté the Vegetables: In the same skillet, add the remaining butter. Once melted, add onion and bell pepper. Sauté for 4-5 minutes, then add garlic and sauté for another 1-2 minutes.
Add the Sauce: Lower heat to medium and pour in heavy cream. Add garlic powder, paprika, and salt and pepper. Stir and let simmer for 3-4 minutes.
Incorporate Cheese: Gradually add grated pepper jack cheese to the sauce, stirring until melted and creamy. If the sauce is too thick, add reserved pasta water to adjust consistency.
