1 large egg
1 teaspoon vanilla extract
1 cup grated zucchini (about 1 medium zucchini)

Instructions
Preheat your oven to 350°F (175°C) and grease a small loaf pan or line it with parchment paper.
In a medium mixing bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
In a separate large bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined. Add the egg and vanilla extract, whisking until smooth.
