This delightful dessert offers a moist, spiced apple cider cake that’s perfect for holiday brunch treats or a comforting afternoon snack.
Ingredients
Scale:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup apple cider
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/4 cup unsalted butter (melted)
1/2 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a bundt pan to ensure easy release.
In a large mixing bowl, whisk together all the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
In a separate bowl, mix the wet ingredients: apple cider, vegetable oil, eggs, and vanilla extract until fully blended.
Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined.
Pour the batter into the prepared bundt pan, smoothing the top with a spatula.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, let the cake cool in the pan for about 10 minutes, then carefully invert onto a wire rack to cool completely.
While the cake is cooling, prepare the topping by mixing the granulated sugar and cinnamon in a small bowl.
Brush the warm bundt cake with melted butter and sprinkle the cinnamon sugar mixture generously over the top.
